Do I have to use all the gift certificates at once when I buy several?

The short answer is no.

To provide an example, if you buy 5 cups of Starbucks Ice Americano as gifts then you don't need to exchange 5 cups of coffee at once. Five separate gifticons (mobile gift coupons) are issued and can be used one by one.
